    no “best meal” but: I’d say avoid meat substitutes and don’t try to recreate meals which usually contain animal products. some things are meant as they are and don’t take changing core ingredients lightly. my go-to is Indian food, esp. dhal (lentils). there are loads of recipes which have stood the test of cranky kids and grumpy husbands. in fact there’s lots of classic recipes from times where people could not afford eating animal products regularly and still wanted great food. however it’s all homemade and sometimes time-intensive. hth
