Well, there’s certain varieties of hops that don’t fare well under the changing climate and that may provide a better taste than other varieties, or at the very least a characteristic taste that people enjoy.
Obviously, with enough money, you could still grow these varieties in basically lab conditions, but well, that will hike the price significantly and they can’t compete anymore, so that variety/taste will go missing.
Not by utter necessity, but because maintaining price and quality would make the profit margins smaller
