Currently I’d say the /c/'s that indexes the growing numbers of communities across the different instances:
/c/newcommunities@lemmy.world and /c/wowthislemmyexists@lemmy.ca
I suggest looking through the “All” tab of the communities list. And just look if you see any sub that you think you would like. You can always unjoin (:
