Extra firm is probably best, you can press it further as well. I encourage mushrooms as additional to a meat replacement like tofu, seitan, or tempeh. Otherwise you might not get enough protein. It depends on the mushroom, but assuming it’s button mushrooms, they won’t give you similar amounts of protein as meat (whereas wine caps have more protein per gram than beef, but I’ve never seen them at the store, you have to grow those yourself).
